What we look for
Mercedes Uceda, certified professional taster, personally selects every oil on our menu. We don't work with intermediaries — only directly with producers and mills.
- Extra virgin only. We do not work with other categories.
- Artisanal production. We value early harvesting, cold extraction and care at every stage.
- Full traceability. We want to know the grove, the variety and the story behind the oil.
- Unique character. We look for oils with personality, not generic oils.
